Chef Clayton Shaw – Bar Bludorn

Our employees had a fabulous time in the kitchen with our friends Chef Aaron and Chef Rob of Bludorn and their NEW Executive Chef at neighborhood restaurant Bar Bludorn, Clayton Shaw.
Clayton is a native Texan who studied at the Culinary Institute of America in Napa Valley. While working at Thomas Keller’s Ad Hoc & Addendum in Napa. He joined Bludorn in 2021 and began his externship shucking oysters .
Clayton completed culinary school and returned to Bludorn, working his way up to sous chef in 2023 and executive sous chef in 2024 before being named Executive Chef at Bar Bludorn in May of 2025.
Whole Roasted Chicken and Port Wine Gravy with Roasted Marbled Potatoes and Root Vegetables. We had so much fun spatchcocking chickens and learning how to make the delicious port wine gravy that accompanies this meal.
Be sure to stop in every Wednesday in December for this simple but spectacular meal that is sure to please everyone at your table!
